Quinoa kichidi

Quinoa is a nutritious gluten free grain that is high in protein and ideal for vegetarians who wish to increase their protein intake. It has a protein value that is extremely high (12-18%) and the protein it supplies is complete protein, meaning that it includes all nine essential amino acids. Because of this, it takes less quinoa protein to meet one's protein need than wheat protein. Quinoa is easy to digest and naturally contains no gluten. It is also a good source of dietary fiber, phosphorous, magnesium, and iron.


The best place to buy Organic quinoa is at Costco wholesale. They sell at a very reasonable price compared to Whole foods or PCC etc.

Below is a recipe that we enjoy a lot and quite simple to make.

Organic Quinoa kichidi

Ingredients
Quinoa – 1 cup
Moong daal – ½ cup
Chopped Veges – 1 cup (like carrot, peas, potatoes)
Chopped Tomato – 1
Dhaniya-jeera powder – ½ tsp
Sambar powder – ½ tsp
Hing – a pinch
Salt – 1 tsp
For seasoning- mustard, jeera – ¼ tsp each
Chopped green chillies – 2
Ginger – a small piece diced
Ghee – 2 tsp
Water – 3 cups

Method

Combine ingredients 1 – 8 in a microwave safe dish. Add 3 cups of water and 1 tsp ghee. Cook on high setting in microwave for 10 minutes. Stir the contents and put back in the microwave and cook on high setting for another 10 minutes. Please adjust the cooking time according to the capacity of your microwave.

Season ingredients 9 – 11 in 1 tsp ghee and add on top of quinoa kichidi. Enjoy the kichidi with yogurt/raitha and pickle.
