Podi Seasoning

Podi - powder in Tamil is really a coarsely ground mixture of spices and lentils that adds flavour and crunch to several vegetables. If you are an aspiring vegetarian or simply Indian, it would help to have some supply of this staple. Not to be confused with Garam Masala as there is a subtle difference in that podi contains lentil.


1. 2 tbsp channa dal  (aka split humus dal or split Bengal gram)
2. 2 tbsp coriander seeds
3. 2 red chili


1. Dry roast channa dal in a pan until reddish.
2. Add coriander seeds and red chili and continue roasting. Stop when the Channa dal turns deep drown or starts to smoke.
3. Let it cool. Once cool blend coarsely in a coffee grinder or magic bullet.
