Kadai Vegetables

Ingredients:

  Potato -1 
  Tomato - 1
  Onion - 1
 Caulifloweretts - 2 cups
  Bell pepper (any color) - 1
  Ginger - 1/2 teaspoon (grated)
 Garlic - 2 cloves finely chopped or grated
 1/4 cup of water.

Spices:
  Whole corriander seeds - 2 table spoon
  Whole red chillies - 2
  Cumin seeds - 2 table spoon
  Salt - 1 tea spoon (per taste)

 Olive oil - 3 Table spoon

Method:
  1. Grind the spices (coriander, red chilli and cumin) coarsly in a coffee grinder.
  2. Heat olive oil in a pan. Saute the onion till golden brown. 
  3. Add ginger and garlic and sautee for 10 - 15 seconds. 
  4. Add all the other vegetables and spices. Add 1/4 cup of water and close and simmer. Add salt to taste. 
  5. Garnish with cilantro or mint leaves and Serve with Roti or Pita.
